Emulators

Mac/Linux users: KiGB (link) has very accurate emulation of the Game Boy hardware.

Windows users: BGB (link) has very accurate emulation of the Game Boy hardware. It also features a powerful debugger.

DOS users: Nocash Gameboy (link) is a good emulator for DOS with really nice debugging capabilities. It doesn't display CGB hi-colour screens correctly and has problems with some newer hardware tricks.
